Smoothie pancakes are a fun, healthy twist on classic pancakes, blending the flavors and benefits of a smoothie into a fluffy pancake form. Packed with fruit, protein, and fiber, they make a nutritious and delicious breakfast!

Instructions

  • Blend the smoothie: In a blender - combine banana - berries
  • milk - yogurt - oats - baking powder - vanilla - egg
  • and a pinch of salt. Blend until smooth and thick.
  • Cook the pancakes: Heat a non-stick pan or griddle over medium heat. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2-3 minutes)
  • then flip and cook the other side for another 1-2 minutes.
  • Serve: Stack pancakes and serve with toppings like fresh fruit - nut butter
  • or syrup.
