Cook the quinoa: If you haven't already cooked the quinoa - follow package instructions. Typically - quinoa cooks in 10-12 minutes in water or broth.
Sauté veggies: Heat olive oil in a pan over medium heat. Add bell peppers and spinach (or kale) - cooking until softened (about 3-4 minutes). Season with salt - pepper - and optional spices (cumin or paprika).
Cook the egg: In the same pan - cook your egg to your preference (scrambled
fried - or poached).
